| Kueh lapis (layer cake)

Ingredients
1 coconut (grated)
18 oz of water
7oz rice flour
9 oz sugar
1 tsp salt
vanilla essence
3pandan leaves
Method:
Mix coconut with water and squeeze out the milk. Divide into two
equal qualities. Divide flour with one portion of the milk and put
aside. Cook the other portion of the milk with sugar, salt, vanilla
essence and pandan leaves. After it is boiled, pour it over the milk
and flour mixture, Divide into two equal quantities. Add red
colouring to one portion, and leave the other portion uncolored.
Pour a little of the red batter into a tray and steam. Continue to
steam one layer at a time until the batter has been completely used
up. Cool before cutting into the desired shapes.
