Chinese Red Wine

Ingredients
1kg glutinous rice
2-3 pieces of wine biscuits (chew pia)
75g (or
2 taels) red rice bran (ang kek bee)
Preparation
1. Soak glutinous rice in water overnight.
2. Cook rice and let cool
3. Break the wine biscuits and mix it with the red rice
4. Mix #3 thoroughly with the cooked rice
5. Let it ferment 2-4 weeks
Tips
It should be fermented for one month in an earthen ware to achieve
the colour and texture. You have to use dry fermented red rice so
that it turns red. For the first week , stir it every day , then
twice weekly. Strain in a muslin cloth, wine for cooking and residue
for marinating.
