Rich Cheese cake
2. Put the crushed biscuits into a bowl and mix in the melted butter with a fork Line the base and sides of an 8" cake tin with a removable base with the crumb mixture. Allow to set for 1 hour in the refrigerator or freezer for a while.
3. Cream the cheese with the sugar and eggs. Add in the lemon rind and the juice. Pour the entire mixture into the chilled biscuits case and smooth the top.
4. Bake at 300° for 30-40mins or until the filling is set
5. When the cheesecake has cooled down, chilled in the refrigerator for several hours before serving with whipped cream on top.
