Basic Cake Mix Recipes
Optima sponge cake mix
For a 9 inch round cake tray
4eggs
1 tsp ovalette
250gm optima flour *
70ml water
70 ml cornoil
* May be substitute with 180g self raising flour plus 160g sugar
Whisk all together except corn oil till fluffy and thick. Then pour in corn oil
and mix it till well combined. Pour into tray and bake at 175 C for 45 mins or
till cooked
* Optima flour sponge mix has sugar added into the flour. Do Not add Sugar.
Coles Butter Cake Mix.
Coles smart buy butter cake mix 340g ( 1packet) * ( see below substitute)
2/3 cup milk ( 160ml ) milk
2 eggs
60g ( 3tablespoon ) soft butter or Margarine
1. Preheat oven to 180C conventional /160C fan forced. Lightly grease and line a
20cm x 7 cm deep round cake pan.
2. Empty cake mix into a bowl. Add milk, eggs and butter and beat with electric
mixer on medium for 3 minutes until thoroughly combined.
3. Pour into Pan and bake for 40-45 minutes or until cooked when a skewer
inserted into the centre comes out clean. Stand for 5 minutes in the pan before
inverting onto a rack to cool.

Coles Vanilla Flavoured Cake mix
Coles smart buy Vanilla Flavoured cake mix 340g ( 1packet)* (see below for
substitute)
3/4 cup milk ( 180ml ) milk
1 eggs

20cm x 6 cm deep round cake pan.
2. Empty cake mix into a bowl. Add milk, egg and beat with electric
mixer on medium for 3 minutes until thoroughly combined.

Icing
For a quick icing, mix 3/4 cup shifted icing sugar, 1 tablespoon milk, 3
tablespoon soft butter or margarine and vanilla essence to taste.
Traditional Moist Sultana Butter cake Mix
1 packet (340g) Traditonal moist sultana butter cake mix* (see below
substitute)
1 egg
60gm margarine spread or soft butter
190ml (3/4 cup) milk * May be substitute with 250g self raising flour plus
180g sugar
1. Preheat oven to 180 C conventional or 160C fan forced. Grease a 22cm x
11cm loaf pan. Line the base with baking paper
2. Mix . Empty the cake mix into a mixing bowl. Add egg, milk and
margarine spread or soft butter. Beat with a wooden spoon until mixture is
smooth and well cmbined.
3. Bake. Spread mixutre into prepared pan. Bake for 45-55 minutes or
until a skewer inserted into the centre comes out clean. Stand 5 mintures in pna
before turning onto a wire rack to cool..
