Banana Yeast Bread
Ingredients
1 1/4 tsp instant yeast
50ml warm water
2/3 cup (155g) mashed ripe bananas
60g sugar
50ml warm milk
50g butter, softened
1/4 teaspoon salt
1 large egg
3 1/2 cups all-purpose flour
Method
1. In a large bowl, dissolve yeast in warm water. Add the
bananas, sugar, milk, butter, salt, eggs and about 2/3 of the
flour. Beat on medium speed for 3 minutes.
2. Stir in the remaining flour to
form a stiff batter. Do not knead.
3. Spoon into a greased 9-in. x
5-in. loaf pans. Cover and let rise in a warm place until doubled in
size,
about 2½-3 hours.
4. Bake at 190° C for 25-30 minutes or until golden
brown and bread sounds hollow when tapped.
Tips
If it got a little too
done (brown) on the top, just lay a piece
of foil across the top of the loaf for the last 10 or so minutes. This will help keep it from getting too brown. Remove from
pan to wire racks to cool.
